Maggie’s Monday Meals

It’s National Grilling Month so fire up the briquettes and let’s get cooking!  Pair with a few ears of sweet corn and a fruit salad, for a quick and easy meal!

Grilled Orange-Ginger Chicken




  • 1/4 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup vegetable oil
  • 2 tablespoons sesame seeds
  • 1 tablespoon garlic powder
  • 1 tablespoon ground ginger
  • 1 tablespoon orange zest
  • 1/2 teaspoon crushed red pepper
  • 1 1/2 pound boneless, skinless chicken breasts



Mix all ingredients except chicken in a medium bowl. Reserve 2 tablespoons marinade for brushing.

Place chicken in a large resealable bag. Add remaining marinade; turn to coat well.

Massage chicken and marinate for 4 to 5 minutes. Remove chicken from marinade. Discard any remaining marinade.

Grill chicken over medium heat 6 to 7 minutes per side or until cooked through, brushing with reserved marinade. Discard any remaining marinade.
